Die Lebendigkeit des Fermentationsprozesses lässt sich an aufsteigenden Luftblasen im Glas beobachten. Die Bakterien arbeiten auf Hochtouren, beim Öffnen des Glases entweicht zischend Gas mit einem starken Knoblauch Geruch. (Es handelt sich um eine Art Gurken/Rote Beete Kimchi) und man kann die Luftblässchen auch deutlich hören, ähnlich wie bei einem Glas Wasser mit Kohlensäure.
